Healthy Blueberry Muffins (GF)


Makes 9 muffins


  • 2 cups oat flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 flax egg (1 tbsp flax seed + 2.5 tbsp water)
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil
  • 1/2 cup unsweetened nut milk ( I use coconut milk)
  • 1 tsp freshly squeezed lemon juice
  • 1/3 cup maple syrup
  • 1 cup of fresh blueberries (if frozen, coat the berries with 2 tbsp oat flour right before mixing to ensure they don’t melt and turn the batter blue



  1. Preheat oven to 350 °F and line 9 muffin tins with parchment paper
  2. In a small bowl, whisk together the oat flour, baking soda, salt and cinnamon
  3. In a large bowl, add remaining ingredients, except blueberries. Mix well until all combined.
  4. Add dry ingredients to wet ingredients and mix well. All oat flour clumps should disappear. Slowly fold in the blueberries. Be careful not to squeeze any blueberries and release any juice
  5. Pour about 2-3 tbsps of batter into each muffin tin. Bake for 22 minutes. Allow them to cool for about 5 minutes before devouring.
